The citric flavour adds that extra zing to the freshness of thecake as you take the first bite of it.

· 3 large eggs
· 1 ¼ cups sugar
· ½ cup milk
· ½ cup mirinda/ fanta
· 1 ¾ cups flour
· ½ teaspoon baking powder
· ½ teaspoon baking soda
· ½ teaspoon salt
· ½ cup olive oil
· Zest of 1 orange
· A pinch of saffron red colour
METHOD:
- Preheat an oven to 400 degrees F. Butter an 8-inch cake pan with 2-inch sides, then dust with flour.
- Beat the eggs with the sugar to pale yellow. Beat in the milk, oil and orange zest.
- Sift the flour with the baking powder, baking soda, orange colour (if dry)and salt.
- Add the flour mixture to the egg mixture stirring well with a spatula.
- Mix in the soft drink.
- Pour batter into prepared cake pan and bake for 45 to 55 minutes or until cake springs back when lightly touched. Remove cake from oven, let cool .
- Beat some whipped cream a tsp of lemon zest and spread over the cake.
