ORANGE BLOSSOMS







The citric flavour adds that extra zing to the freshness of thecake as you take the first bite of it.


INGREDIENTS:


·         3 large eggs
·         1 ¼   cups sugar
·         ½  cup milk
·         ½ cup mirinda/ fanta
·         1 ¾  cups flour
·         ½  teaspoon baking powder
·         ½  teaspoon baking soda
·         ½  teaspoon salt
·         ½  cup olive oil
·         Zest of 1 orange

·         A pinch of saffron red colour


METHOD:

  1. Preheat an oven to 400 degrees F. Butter an 8-inch cake pan with 2-inch sides, then dust with flour.
  2. Beat the eggs with the sugar to pale yellow. Beat in the milk, oil and orange zest.
  3. Sift the flour with the baking powder, baking soda, orange colour (if dry)and salt.
  4. Add the flour mixture to the egg mixture stirring well with a spatula.
  5. Mix in the soft drink.
  6. Pour batter into prepared cake pan and bake for 45 to 55 minutes or until cake springs back when lightly touched. Remove cake from oven, let cool .
  7. Beat some whipped cream a tsp of lemon zest and spread over the cake.
