KIWI CRACKER



I love the greens of kiwi,and the earthy unusual taste combined to form the topping on an eggless cake is worth a try

INGREDIENTS:
  • 1 cup flour
  • 1 cup oil
  • 3/4 cup powdered sugar
  • ½ cup kiwi crush
  • ½ cup sprite
  • 1 tsp baking pwd
  • 4 eggs



METHOD:
  1. Sieve together the dry ingredients.
  2. In a bowl beat together eggs and sugar till pale and yellow.
  3. To this add oil, kiwi crush and dry ingredients and mix well with spatula.
  4. Now add the sprite and mix well till smooth.
  5. Bake in pre heated oven at 180 deg centigrade for 25 – 30 mins.
  6. Remove cake from oven and allow to cool.



TOPPING:
  • Whipped cream
  • Fresh kiwi
  • crushed cornflakes


  •  Spread some cream on top and decorate with kiwi slices on top.
  • Press the sides of the cake with a handful of crushed cornflakes over the cream.
