I love the greens of kiwi,and the earthy unusual taste combined to form the topping on an eggless cake is worth a try
INGREDIENTS:

- 1 cup flour
- 1 cup oil
- 3/4 cup powdered sugar
- ½ cup kiwi crush
- ½ cup sprite
- 1 tsp baking pwd
- 4 eggs
METHOD:
- Sieve together the dry ingredients.
- In a bowl beat together eggs and sugar till pale and yellow.
- To this add oil, kiwi crush and dry ingredients and mix well with spatula.
- Now add the sprite and mix well till smooth.
- Bake in pre heated oven at 180 deg centigrade for 25 – 30 mins.
- Remove cake from oven and allow to cool.
TOPPING:
- Whipped cream
- Fresh kiwi
- crushed cornflakes
- Spread some cream on top and decorate with kiwi slices on top.
- Press the sides of the cake with a handful of crushed cornflakes over the cream.
