RICE AND JAGGERY KHEER










INGREDIENTS:



  • Ada – 1 cup ( soaked in water for 15 min)
  • Jaggery – 1 cup
  • Cardamom pwd – 1 tsp
  • Salt – ¼ tsp
  • Cashews and raisins – 1 tsp each
  • Ghee – 3 tbsps
  • Coconut milk extracted – 4 cups



    METHOD
  1. Strain the Ada in a strainer.
  2. Dilute the jaggery in I cup water with cardamom pwd. Strain and keep aside.
  3. Fill ½ of a pan with water, add salt to it and allow to boil
  4. To this add Ada and cook on low flame till Ada is cooked through.
  5. Remove from flame add some cold water and strain in a strainer.
  6. In a pan add ghee and fry the nuts and keep aside.
  7. To the same ghee add the Ada and sauté till they start to separate.
  8. Add jaggery to it and cook in low flame for 10 mins.
  9. To this add 2 cups of coconut milk and keep cooking on medium flame till the milk reduces and Ada is seen on top.
  10. Now add the rest of milk and mix well.
  11. Sprinkle nuts on top and serve.
