My hubby dear, not very fond of coffee and me, loveeee coffee....so I found out a way to make him love coffee....try this recipe and you will know.....afterall "I am the boss of the "kitchen"
- 2 cups flour
- 2 teaspoons instant coffee powder
- 1/2 cup butter
- 1 cup hung curd
- 1 tbsp cornflour
- 1 teaspoon baking soda
- 1 large egg(beaten)
- 2 cups brown sugar
- 1 teaspoon cinnamon powder
- 1/2 teaspoon salt
METHOD:
- Mix together flour and coffee in a bowl.
- Add in butter and mix till crumbly.
- Put half of the mixture in a greased 8 inch pan and leave aside.
- Mix together curd , cornflour and baking soda. Add this to the crumb mixture , and mix well to make it soft and remove any lumps.
- Add the beaten egg to it and gently mix it.
- Pour the cake mix into the crumble mix in the pan.
- Bake at 350º for 45 minutes.
FOR THE TOPPING:
- 1 cup sugar
- 3 tablespoons butter
- 1/3 cup milk
- ¾ cup chocolate chips
- ½ cup coarsely crushed nuts
- 1 cup crushed biscuits
METHOD:
- Combine all ingredients except chocolate in saucepan over medium high heat.
- Stir constantly until melted. Bring to a boil for 1 minute, still stirring.
- Remove from heat. Add in chips and stir until completely melted.
- Add nuts, mix well and spread on cooled cake.
- Spread some chocolate icing on the sides of the cake and press the crushed biscuits to it
